Mindy's Black Bean Burritos

It's been a long time since I've blogged a recipe. It's not because I forgot about this site, but because this quarter of school just started and I'm taking full-time credits... hopefully, since the first week's over, all will calm down and I can put up some yummy creations (I've got a few that I REALLY need to put up!).
In the meantime, my awesome awesome AWESOME ginger Aunt Mindy sent me this recipe of an all time favorite vegetarian food; however, there are some creative twists to give a little bit more of a kick than a normal burrito. Enjoy!

8 (10 inch) flour tortillas
1/2 cup vegetable oil
4 small onion, chopped
2 red or green bell pepper,seeded and chopped
1 tablespoon and 1 teaspoon minced garlic
4 (15 ounce) cans black beans, rinsed and drained
1 tablespoon and 1 teaspoon minced jalapeno peppers(seeded and veined)
3/4 pound cream cheese
2 teaspoons salt
1/2 cup chopped fresh cilantro

DIRECTIONS
Wrap tortillas in damp paper towel and heat in microwave about 45 seconds or untill heated through.
Heat oil in a 10-inch skillet over medium heat. Cook onion, bell pepper, garlic and jalapenos in skillet,for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
Spoon mixture evenly down center of warmed tortilla and roll tortillas up.
Serve immediately.
